Components
- 1/3 cup tahini
- 1/3 cup lemon juice (about 2 to 3 lemons)
- 3 tablespoons extra-virgin olive oil, plus more for garnish
- 1 medium clove garlic, approximately sliced
- 1/2 teaspoon fine-grain sea salt
- 1/2 cup gently loaded fresh cilantro leaves, plus more for garnish
- 1 1/2 cups shelled edamame ( 10 ounces), ideally natural, thawed if frozen *
- 2 to 4 tablespoons water, as essential
- Sesame seeds for garnish (optional)
Directions
- In the bowl of your food mill or high-powered mixer (i.e. Vitamix or Blendtec), integrate the tahini, lemon juice, olive oil, garlic and salt. Process for about 1 1/2 minutes, stopping briefly to scrape down the sides and base of the bowl as essential, till the mix is well mixed.
- Include the cilantro and procedure for about 1 minute, stopping briefly to scrape down the bowl as essential, till the herbs have mixed into the mix and the mix is good and smooth.
- Include half of the edamame to the food mill, plus 2 tablespoons water, and procedure for 1 minute.
